Lajollacooks4u, a cooking and dining experience, based in San Diego, was selected by Bermuda-based Southern Cross Cable Network for its global corporate retreat.
The company brought its entire staff from Australia, New Zealand and Bermuda to participate in the hands-on cooking demonstration with Lajollacooks4u owner and founder, Chef Jodi. The group created their very own Thanksgiving holiday meal, along with wine pairing on November 28th. Lajollacooks4u partnered with Another Side of San Diego Tours.
Each guest learned first-hand about California Cuisine while sampling a variety of olive oils and salt. Everyone also heard the Thanksgiving story. For guests and Chef Jodi, the four hours went by too fast. ?We all learned something that day,? said Chef Jodi. ?For my Cross Cable Network guests, it was a lesson in Thanksgiving and for me it was about meeting people from around the globe and understanding a little more about their respective cultures.?
Guests started off their culinary event with appetizers of puff pastry and pear, topped with caramelized onions and blue cheese. There was also a selection of goat cheese with cranberry relish, washed down with a California Chardonnay. This was followed by pumpkin soup with fresh sage and a gruyere crostini, served with a Californian Viognier. A herb-rubbed turkey breast with a Shallot and Dijon gravy, served with a Spanish Cabernet, rounded off the meal. Of course there were the traditional sweet potatoes with brown sugar syrup and roasted string beans with lemon juice, olive oil, pine nuts and parmesan cheese. A wild mushroom and leek stuffing complimented the turkey. Dessert consisted of pears blanched in white wine with a pecan crumble. An assortment of chocolate bark concluded the meal.
